Odette’s spiced apple cake

5 apples (peeled, cored and chopped) – St Just (Kay’s garden)
1 cup Golden Syrup – Ralphs (village shop)
6oz margarine – Ralphs
6oz Brown Sugar – Ralphs
3 Eggs – Philly Court Farm
1 tsp Bicarb – Ralphs
1 cup of milk – local milk man
16 oz plain flour – Ralphs
2 tps mixed spice – Ralphs
100g apricots – Ralphs
100g currents – Ralphs
100g chopped dates – Ralphs

Method – makes one 10 inch cake

  • slice apple cook with golden syrup in pan until soft
  • pre-heat oven to 180c
  • beat the butter & sugar until creamy
  • add eggs one by one
  • dissolve the bicarb in the milk then beat this into the mix
  • fold in batches of flour, spices, apple and chopped dried fruit
  • bake for 40-50 min (or unitl golden brown – when stabbed with a knife to the centre
  • that comes out clean, it’s done).

this cake will not rise and is quite stodgy.
