Andrea’s Yummy Rice Salad

Ingredients (all from Ralphs – the village shop)
3 cups of rice
1 large pepper
3 sticks of celery
1 tin kidney beans or other beans (not in sauce)
half pot of yoghurt (large)
150 grms Mayo
100grms nuts (any you like)
100grm seeds (pumpkin, sunflower etc)
1 block feta
1 red onion (large)
curry powder to taste or a jar of pesto & anything else you fancy
eg tinned sweetcorn, sultanas, chopped pineapple – ‘just go wild!’

Method

  • boil rice until soft (10-12 mis), drain and rinse under cold water
  • put yoghurt, mayo, curry powder (or pesto) into a large bowl and mix well
  • chop the pepper, onion, celery and add to the bowl
  • add the seed, nuts beans (drained) and anything else.
  • finally add the rice and stir well to mix all ingedients and coat with the curry / pesto sauce.
