elderflower champagne – batch 1

our first go at Elderflower Champagne from a recipe in this WI book (a lucky find at a local car boot sale)

Taking a hint from the handwritten notes, we made half the amount as follows:

  • 3 elderflower heads (fully opened)
  • 2 tablespoons of white wine vinegar
  • half a gallon of water
  • 1lb of sugar
  • 2 lemons

we bottled up into Grolsch bottles with a bit of room left for the gases..
