our first go at nettle soup..at last. Pick young shoots, 4/6 top leaves (with scissors and wearing gloves). Half fill carrier bag then the soup recipe is really up to you, there’s a couple here. I just fried an onion in organic sunflower oil, added some garlic a couple of small potatoes, veg boullion, a bit of roesmary, a bay leaf and some parsley. Served with Gomasio sprinkled on top – delicious!
Gomasio is roasted sesame salt – easy to make, half a cup of sesames seeds roasted in a skillet then ground with 2 teaspoons of sea salt. Really tasty and good for you, less sodium, more calcium.
